4/19/2020 2 Comments Elise Bass, Ulcerative ColitisElise shares her story on instagram @myoneucjourney "8 years ago I was diagnosed with Ulcerative Colitis, for 8 years I have battled this disease. I have tried pills, infusions, humira and my body rejected all of these. My body deteriorated, I was constantly in and out of hospitals, and on prednisone for 7-8 months at a time. I couldn't work for almost 6 months at one point and I was extremely depressed. I could barely get out of bed and life in general was just hard. December 29th, 2016 was one of my worst flare ups. My doctor standing beside my hospital bed was telling me I had no other option but to remove my colon since my body rejected everything else. December 29, 2016 I had finally made the decision to stop relying on medicine and to start relying on what my body actually needed. I started the Specific Carbohydrate Diet (no sugar, no starch or carbohydrates). And within a week I had already seen an insane amount of improvement. Everyday I got better and eventually went into remission. It has been 4 years of a lot of ups and downs but I'm the healthiest and happiest I've ever been."

Interesting "Specific Carbohydrate Diet (no sugar, no starch or carbohydrates).".. I was diag'd in 2014, I started on a plant based diet nearly 4 years ago in mid 2016 & I've been in remission ever since, no pain, no meds, no flareups. I eat lots of rice, quinoa, potatoes, green beans, broc. leeks, tomatoes, carrots, lentils, tofu, tempeh, plant based mince, oats etc No dairy, no gluten, no meat. After analysing what I think had the most impact it was gluten. You said no carbs so does that mean you also don't consume gluten?

Gluten is what has been a major impact on my health as well. I believe the Simple carbohydrate Diet is mostly gluten free, however, I don't have a lot of knowledge about it. Since this is Elise's story, I would recommend contacting her with these questions. She will be able to answer this better than I could. I included her Instagram at the top of the blog post for reference.
